when talking about molecular gastronomy,分子料理 what first comes to your mind?? Herve This?? El Bulli ?? Fat Duck?? ...

I still cannot come to terms with the idea of flying 12+ hours to Europe... Hence, decided to 獻出我的第一次 at Tokyo's Mandarin Oriental ... Tapas Bar

There are only 8 seats for each round of service ... hence, if you are interested, you better reserve your place 1-2 months in advance.....

This welcome drink in a test tube -- Apertif

the two chefs ... an American and a Japanese

Caramel Corn -- really light --

I ordered a Tapas drink .... forgot how it tastes

apple manchego (some cheese)

crab

carrot caviar (of course using calcium cholide to do the trick)

but is not really delicious ....

Red (all using tomato ... even the transparent jell... quite refreshing ... and tastes good)

uni and fennel -- tastes like crab bisque

Laugoustine Jim (some artist)-- the black strips are ebi/ squid sauce)

Wagyu -- the most impressive dish -- cooked in vacuum bag (for slow cook) and put in 3X degree water for 12 hours... and then put it on hot iron to give it the grilled mark ... really juicy and succulent...  

watermelon bash -- v v cold stuff

smoke -- just chicken -- but with lots of smoke -- yum?? --  I prefer 三和雞 la ...

Unagi, Pineapple, Miso -- actually, there is no miso -- the miso is mixed pineapple +  avocado -- and taste like miso!! unagi is not particularly good ...

Xialongbao -- actually lamb chop .. but they consider it so juicy that it should be called 小籠包 -- you asked me ... gimmick la...

this ... "smoke" comes out of your nostrils.. and you have to chew fast 

The fruit plate is really interesting ... this miracle fruit (red one) can really do magic.

we first chewed some very sour grapefruit/ lime... then, we put the miracle fruit in mouth for 1 minute ... then, we have the sour stuff again ... ALL become sweet !!!

吃後感: first, the meal is rather expensive ... around $3,300 for two ...(we ordered champagne .... that accounts for some 6-7000 yens)  second... this is rather an experience or an adventure than a meal ...

must say that this has somehow 撲息農婦去 El Bulli 的火 ... but still .... before we say that we do not like 分子料理, we better try some first ....

BUT.... I think molecular gastronomy is worth studying (read Herve This' books)... and we can rediscover some good cooking style... like slow cook ... (農婦按 --- o車... 整貴妃雞都係低溫slow cook la ...)
